How to Secure Your Grass-Finished Beef

We’re excited to bring you the finest grass-finished beef from Green Valley Acres! Follow these simple steps to secure your order and enjoy farm-fresh goodness from our farm to your table.

Step 1: Deposit

Place a non-refundable deposit to secure your order. This commitment ensures your share of our premium beef and helps us plan for the season ahead.

Step 2: To the Butcher & Cost Calculations

We’ll bring your cow to Deerview Meats during the fall season, from September to October. This allows your cow to first reach peak flavour and quality on our Southern Alberta pastures. The butcher will measure the hanging weight of the cow which determines your total cost. Green Valley Acres will create an invoice for the final payment and Deerview Meats will calculate your butchering fees (example calculations below).

Step 3: Custom Processing & Aging the Beef

Deerview Meats will contact you to discuss what kinds of cuts of beef you’d like and will dry-age the beef at their government-licenced facility to improve flavour, make it more tender, and concentrate the taste. The dry-aging process usually takes 14-28 days

Step 4: Your Beef is Ready!

Once the aging process has brought out the best side of your grass-finished beef, your beef will be ready to pick up. Deerview has a 7-day window to pick up your beef from their shop, located 15 minutes outside of Medicine Hat. If travel isn’t convenient, we can help arrange shipping to your location at your expense.

For example, if the hanging weight is 600 lbs and you’ve purchased a ¼ share (150 lbs), the cost will be 150 lbs × $7.25/lb = $1,087.50. (PLEASE NOTE: hanging weight is not final weight. If this is your first time purchasing beef directly from a farm, please see our FAQ page for details hanging weight, the industry standards for this process, and why it is done this way.) After subtracting your ¼ share deposit of $500, your balance owing to Green Valley Acres would be $587.50. You’ll receive a detailed invoice reflecting your share and this invoice must be paid in full, prior to you picking up your beef. Deerview Meats would also require a payment of about $195 in this example.
